Chateau de Violet was refurbished in XVIIth and again in the XIXth until it was finally converted into a three star hotel restaurant in 1966. The chateau is surrounded by gardens and forty hectares of vineyards which are also part of the chateau property and under cultivation by the chateau owners. The grape varieties are: Marsanne for the whites and Mourvedre, Grenache and old established Carignan vines, to make the reds and the roses. A lot of antique valuable pieces can be found through out the salons and rooms of this chateau, which are decorated in different styles and overall comfortable but not modern.
Not to be overlooked is the wine making museum of the chateau which includes pieces of equipment used more than a hundred years ago. They also offer residential wine tasting weekends, an interesting initiation into the language and appreciation of wines in the company of oenologists and wine connoisseurs; participants progress from the conference hall, to the vinification and finally to the maturing cellars.
