Even if it were not for the river Charente, which Henry IV called “the most beautiful in my kingdom”, Cognac would still have made a name for itself, thanks to its flourishing wine and salt trade and its inhabitants, the “Cognaçais”, who - proud of their nickname “cogouillard” (snails) - enjoy the gentle flow of life. During the XVII century, the “Cognaçais” started using a double distillation process which optimized the concentrated alcohol they produced - known as the “water of life” or “eaude- vie” (brandy) - both from the point of view of price and safety, even on long journeys. Upon arrival at destination, the alcohol, stored in oak barrels, was to be diluted. It was by pure chance that the Cognaçais discovered that brandy kept in oak barrels improves with age.
They therefore started drinking it, and shortly after it became known as Cognac.
